Avidin

Avidin is a term in biochemistry for a protein. This tetrameric biotin-binding protein is found in raw egg white. It is produced in the oviducts of birds, reptiles and amphibians, deposited in the whites of their eggs, combines with biotin and hinders its absorption. Dimeric members of the avidin family are also found in some bacteria.
