Cordon Blue

Cordon Blue was formerly the badge of the Order of the Holy Ghost, named so because of the blue ribbon with a cross pendant. The order was established in 1578 by the king Henry III of France, which was the highest order of knighthood in the country under the Bourbon monarchy. A knight of the order was called "Cordon Bleu".

Later, the term "Cordon Bleu" became associated with culinary excellence and used for the badge of highest excellence in a cook.
