Barbacoa

Barbacoa is slowly cooked beef, lamb, or other meat with seasonings in Mexican cuisine. It is typically shredded and used as filling in several Mexican dishes such as tacos, burritos etc. In Mexican Spanish it also refers to an underground oven in which barbacoa is cooked.
